“Tropical
Fruit” Tea Cocktail
While we recommend mangos, figs, papaya and pineapple
for this cocktail, any tropical fruit will work well in
this cocktail. To avoid having to add sugar, use a demi-sec
sparkling white wine. If you are using sugar do not use
too much as it will be too sweet and therefore not an
effective thirst quencher. Remember to serve well-chilled,
without ice cubes. |

½ litre (18 fl oz/2 cups) strong chilled
tea
2 cl (1 ½ tablespoons) rum
2 cl (1 ½ tablespoons) gin
250g (9 oz / 1 cup) thinly sliced fresh mango,
figs, papaya or pineapple
1 bottle sparkling white wine |

Method

Prepare a strong brew of tea and
allow the brew to cool down to room temperature
before chilling. This practice will ensure that
the chilled brew will not cloud, provided the tea
used is of good quality. Once the tea is chilled
add the rum and gin. Divide the fruit between 4
glasses then pour over the mixture of tea, rum and
gin. Finally top up with the sparkling wine. |
