Tonic Tea
For Tonic Tea, the tea is brewed with milk instead of water. Fresh milk is preferred for Tonic Tea instead of powdered milk. Mixing with a whisk is the best way to ensure that your result turns out fresh and hot. Re-heating is not possible because of the egg content.
     
     
Ingredients -  ¾ litre (26 fl oz/3 cups) milk
 6 teaspoons black tea
 3 egg yolks
 1 tablespoon honey
Method - Reserve a cupful of the milk. Heat the rest to just below boiling point and pour it over the tea. Allow the tea to brew for 3 – 4 minutes, and then strain off. Beat the egg yolks and honey until creamy, then continue beating while adding the reserved milk. Finally add the tea mixture gradually, beating with a hand held electric mixer for best results, and serve hot in glasses.
